Ingredients

  • 1 roll Odense pure almond paste
  • 1/2 cup granulated sugar
  • 1 stick (8 Tbsp) butter
  • 3 eggs
  • 1/2 cup cake flour

Instructions

  1. Preheat oven to 350°F with rack in the middle. Grease and flour a tart or small cake pan.
  2. With an electric mixer on low speed, blend almond paste, sugar, and butter until combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. Increase mixer speed to high and beat until batter is light and fluffy, about 3 minutes.
  5. Stir in cake flour and gently fold into the batter until just blended.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 30 to 35 minutes or until golden and a toothpick inserted in the center comes out clean.
  8. Spread with thin frosting or preserves before serving.
