Ingredients

  • 2 lb. cooking apples
  • juice of 1 lemon
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 10 to 12 slices stale bread
  • 2 1/2 cups apple juice
  • 3 tablespoons raisins
  • confectioners sugar

Instructions

  1. Peel and core the apples, then cut into slices. Sprinkle with lemon juice to prevent discoloration.
  2. Sprinkle the apple slices with sugar and cinnamon.
  3. Toast the bread slices in a moderate oven at 350°F (175°C) for 10 to 12 minutes until lightly browned and very dry.
  4. Rub the toasted bread through a coarse strainer or grind in a blender to make breadcrumbs.
  5. Add enough apple juice to the crumbs to moisten them thoroughly.
  6. Put half of the bread mixture in a greased baking dish.
  7. Spoon the apple slices over the bread mixture and sprinkle with raisins.
  8. Cover with the remaining bread mixture.
  9. Bake at 375°F (190°C) for 45 minutes.
  10. Sprinkle with confectioners sugar and serve warm with cream.
