Ingredients

  • 1 cup uncooked regular rice
  • 1 can mandarin oranges, drained
  • 1 cup chopped green onion
  • 1 cup sliced celery
  • 1 (8 oz.) can sliced water chestnuts
  • 1 (3 oz.) can sliced mushrooms, drained
  • 1/4 cup rice vinegar
  • 1/4 cup vegetable oil
  • 1/4 cup soy sauce

Instructions

  1. Cook rice, omitting salt.
  2. Cool the cooked rice.
  3. Combine the cooled rice with drained mandarin oranges, chopped green onion, sliced celery, sliced water chestnuts, and sliced mushrooms.
  4. Mix rice vinegar, vegetable oil, and soy sauce in a separate bowl.
  5. Pour the dressing over the rice mixture.
  6. Toss lightly to combine.
  7. Chill before serving.
