Ingredients

  • 1 peeled and sliced tomato
  • 1 green pepper, cut into strips (optional)
  • 1 sliced zucchini
  • 1 small eggplant, sliced
  • 1 sliced onion
  • 1/4 cup minced parsley
  • 2 tablespoons lemon juice
  • 1/2 teaspoon thyme
  • 2 cans water packed tuna, drained

Instructions

  1. Layer the peeled and sliced tomato, green pepper strips (if using), sliced zucchini, sliced eggplant, sliced onion, and drained tuna in a greased casserole dish.
  2. Sprinkle the layered ingredients with minced parsley, lemon juice, thyme, salt, and pepper as desired.
  3. Bake at 375°F (190°C) until the vegetables are tender and the flavors meld, approximately 30 minutes.
