Ingredients

  • 2 cups self-rising flour
  • 1/2 cup sugar
  • 1/4 teaspoon ground cinnamon
  • 2/3 cup milk
  • 1 egg
  • 1/3 cup butter or margarine

Instructions

  1. Preheat oven to 425°F and grease muffin pan.
  2. Combine self-rising flour, sugar, and ground cinnamon in a mixing bowl; set aside.
  3. In another bowl, beat the egg; stir in melted butter and milk.
  4. Add the liquid ingredients all at once to the flour mixture, stirring only until the flour is moistened.
  5. Fill muffin cups about 2/3 full with batter.
  6. Bake for 15 minutes or until golden brown.
