Ingredients

  • 3/4 cup buttermilk baking mix
  • 1/2 teaspoon salt
  • 3 medium zucchini, cut into 1/2-inch slices
  • 1 egg

Instructions

  1. Heat 1 inch of vegetable oil in a 10-inch skillet to 375°F.
  2. Mix the buttermilk baking mix and salt together in a bowl.
  3. Dip zucchini slices into the beaten egg, then coat with the baking mixture.
  4. Fry about one-third of the zucchini at a time, turning if necessary, until golden brown, about 2 minutes per batch.
