Ingredients

  • 1 Tbsp lemon juice
  • 1 tsp Dijon mustard
  • 2 Tbsp defatted low salt chicken stock
  • 1 tsp canola oil
  • 1 small clove garlic, crushed
  • salt
  • freshly ground black pepper
  • 1/2 small head romaine lettuce

Instructions

  1. Whisk lemon juice and mustard together in a salad bowl.
  2. Whisk in chicken stock, oil, and garlic.
  3. Add salt and freshly ground black pepper to taste.
  4. Wash romaine lettuce and tear into bite-sized pieces, then add to the bowl.
  5. Wipe endive with a damp paper towel, slice into pieces, and add to the bowl.
  6. Toss the salad well to combine.
