Ingredients

  • 1/2 cup sifted cake flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon almond extract
  • 6 tablespoons sugar
  • 3/4 teaspoon baking powder
  • 3 eggs, separated
  • 1/4 teaspoon pure vanilla

Instructions

  1. Beat egg yolks in a small bowl until very thick and lemon colored.
  2. Add flavoring (almond and vanilla extracts) during the beating.
  3. In another bowl, beat egg whites until stiff and shiny.
  4. Gradually add sugar, one tablespoon at a time, beating constantly until whites are stiff and glossy.
  5. Gently and slowly fold in the beaten egg yolks.
  6. Sift together the cake flour, salt, and baking powder, then fold into the egg mixture.
  7. Drop the batter onto an ungreased baking sheet by level tablespoonfuls for each cookie, spacing them 2 inches apart.
  8. Bake at 350°F (175°C) for 10 minutes until golden brown.
  9. Let the cookies stand uncovered to dry and crisp.
