Ingredients

  • 1 1/2 c. vegetable oil
  • 2 c. granulated sugar
  • 3 whole eggs
  • 2 1/2 c. sifted self-rising flour
  • 1 tsp. vanilla
  • 2 tsp. cinnamon
  • 3 apples (peeled or unpeeled, cubed in 1/2-inch pieces)
  • 1 c. pecan pieces

Instructions

  1. Mix the vegetable oil, granulated sugar, and eggs in a large bowl.
  2. Gradually add the sifted self-rising flour, vanilla, and cinnamon, and mix well.
  3. Fold in the cubed apples and pecan pieces.
  4. Pour the batter into a greased tube or Bundt pan.
  5. Bake at 325°F for 1 hour.
  6. Cool in the pan until firm, about 30 minutes.
  7. Turn out the cake and let it sit for an additional 30 minutes to prevent crust formation.
  8. Serve plain or with a sugar glaze on top for extra flavor.
