Fresh Cabbage Salad

Ingredients

  • 1/4 cup white wine vinegar
  • 1/2 cup olive oil
  • 1 teaspoon dijon mustard
  • 1 teaspoon sugar
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 1 cup green cabbage finely-shredded
  • 1 cup red cabbage finely-shredded
  • 1/2 cup carrot julienned
  • 1/2 cup red pepper julienned
  • 1/4 cup red onion finely-slivered
  • 1 chives small, bunch cut 2" lengths

Instructions

  1. In a bowl whisk together the vinegar, oil, Dijon, sugar, and season with salt and pepper. Set aside.
  2. In another bowl, toss the cabbage, carrot, red pepper, red onion, and chives together lightly.
  3. Drizzle the salad with the vinaigrette, and toss to coat.
