Fresh Cabbage Salad
Ingredients
- 1/4 cup white wine vinegar ⓘ
- 1/2 cup olive oil
- 1 teaspoon dijon mustard ⓘ
- 1 teaspoon sugar ⓘ
- kosher salt to taste ⓘ
- freshly ground black pepper to taste ⓘ
- 1 cup green cabbage finely-shredded ⓘ
- 1 cup red cabbage finely-shredded
- 1/2 cup carrot julienned ⓘ
- 1/2 cup red pepper julienned ⓘ
- 1/4 cup red onion finely-slivered ⓘ
- 1 chives small, bunch cut 2" lengths ⓘ
Instructions
- In a bowl whisk together the vinegar, oil, Dijon, sugar, and season with salt and pepper. Set aside.
- In another bowl, toss the cabbage, carrot, red pepper, red onion, and chives together lightly.
- Drizzle the salad with the vinaigrette, and toss to coat.
