Ingredients

  • 4 cups mixed vegetables
  • 2/3 cup olive oil
  • 1/3 cup white wine
  • 1/4 cup white wine vinegar
  • 1/2 cup onions, chopped
  • 3 garlic cloves, minced
  • 1/4 teaspoon thyme
  • 1/8 teaspoon cayenne pepper
  • black pepper
  • 1 cup fresh parsley, chopped

Instructions

  1. Combine all ingredients except 1/2 cup parsley in a large heavy pot.
  2. Add enough water to cover the vegetables.
  3. Cover tightly and cook over medium heat until vegetables are just tender but still crisp, about 10 to 12 minutes.
  4. Remove from heat, uncover, and let vegetables cool in the pot.
  5. Transfer cooled vegetables to a serving dish.
  6. Cover and chill to allow flavors to blend.
  7. Bring to room temperature before serving.
  8. Top with remaining parsley before serving.
