A vibrant and hearty three grain salad featuring brown rice, barley, and lentils, complemented by fresh vegetables and a tangy lemon dressing, perfect for light lunches or picnics.

Ingredients

  • 1 c. uncooked brown rice
  • 1/2 c. uncooked barley
  • 1/2 c. uncooked lentils
  • 2 c. boiling water
  • 2 Tbsp. lemon juice
  • 1/4 c. oil
  • 1/3 c. finely chopped red Bermuda onion
  • 1 large firm tomato, diced
  • Parsley, salt, pepper, Veg-it or substitute

Instructions

  1. Cook the brown rice, barley, and lentils separately in boiling water until tender, then drain and let cool.
  2. In a large bowl, combine the cooked grains and lentils.
  3. Add the finely chopped red Bermuda onion and diced tomato to the bowl.
  4. In a small bowl, whisk together lemon juice, oil, salt, pepper, and Veg-it or substitute.
  5. Pour the dressing over the grain and vegetable mixture and toss to combine.
  6. Garnish with chopped parsley and serve chilled or at room temperature.
