Ingredients

  • 1 cup walnuts
  • 1 medium zucchini
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9 x 5-inch loaf pan.
  3. Chop walnuts.
  4. Grate zucchini.
  5. Mix together sugar, eggs, vegetable oil, cinnamon, vanilla, baking soda, baking powder, and salt.
  6. Mix well.
  7. Add flour and mix until just combined.
