Ingredients

  • 4 cups peeled and sliced apples
  • 4 cups water
  • 1/2 cup sugar
  • 4 teaspoons cinnamon
  • 6 cups flour
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1 1/2 cups vegetable shortening
  • 1 cup milk
  • 2 cups vegetable oil

Instructions

  1. In a saucepan, combine the apples and water. Simmer until tender, then cool.
  2. Mash the apples, stir in the sugar and cinnamon, and chill.
  3. Combine the flour, salt, and baking powder in a bowl.
  4. Cut in the shortening until well blended.
  5. Add the milk a little at a time to form a dough, then chill for 1 hour.
  6. Roll the dough out to 1/4 inch thick and cut into 4 inch rounds.
  7. Place about 2 tablespoons of the apple filling in the center of each circle.
  8. Moisten the edges with water, then fold the pastry in half, pressing the edges together.
  9. Heat the oil to 370°F and fry the pies until brown.
