Ingredients

  • 1/3 cup oil
  • 1/2 cup water chestnuts
  • 2 cups cooked rice
  • 3 tablespoons soy sauce
  • 1 cup onions, chopped
  • 1/2 cup slivered almonds
  • 2 eggs, beaten
  • 1 cup ham or chicken

Instructions

  1. Saute onions lightly in oil.
  2. Add cooked rice and meat (ham or chicken) to the onions.
  3. Add water chestnuts and slivered almonds.
  4. Push ingredients to the side of the pan and pour beaten eggs into the cleared space, scrambling them.
  5. Mix everything together and add soy sauce to taste.
