Ingredients

  • 2 or 3 yellow squash
  • 1/2 small onion
  • 1 egg
  • 3 or 4 Tbsp. flour
  • cooking oil
  • 1 tsp. salt

Instructions

  1. Wash and cut the ends off of 2 or 3 yellow squash and slice.
  2. Put the sliced squash in a boiler, add salt, pepper, and water, then cook until tender.
  3. Drain the cooked squash and mash it like mashed potatoes.
  4. Add chopped onion, egg, and enough flour to the mixture until it is firm enough to spoon into hot oil.
  5. Fry the spoonfuls in hot oil until golden brown.

Tips & Substitutions

For added flavor, consider incorporating grated cheese or herbs like parsley or dill into the batter. If you don't have yellow squash, zucchini can be a great substitute. Ensure the oil is hot enough by testing it with a small spoonful of batter; it should sizzle immediately. For a gluten-free option, use chickpea flour instead of regular flour.

Serving Suggestions

These fried squash fritters are delicious served with a dollop of sour cream or a tangy yogurt sauce. Pair them with a fresh green salad for a light meal or enjoy them as a snack with a side of dipping sauce. They also make a great appetizer at gatherings, complementing dishes like Deviled Eggs(Easy, Beginners).

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the fritters on a baking sheet and warm them in a preheated oven at 350°F (175°C) for about 10-15 minutes until heated through and crispy again. Avoid microwaving, as they can become soggy.
