Ingredients

  • 2 squirrels
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 1/2 cups flour
  • 1 1/2 cups water
  • lard

Instructions

  1. Cut the squirrels in half.
  2. Dredge the squirrel halves with a mixture of salt, pepper, and flour.
  3. Fry in hot lard in a heavy skillet until golden brown.
  4. Drain off all but 2 tablespoons of lard from the skillet.
  5. Boil 1 1/2 cups of water and pour it over the fried squirrel.
  6. Cover and cook over low heat for 1 hour.
