- Cut the squirrels in half.
- Dredge the squirrel halves with a mixture of salt, pepper, and flour.
- Fry in hot lard in a heavy skillet until golden brown.
- Drain off all but 2 tablespoons of lard from the skillet.
- Boil 1 1/2 cups of water and pour it over the fried squirrel.
- Cover and cook over low heat for 1 hour.
