Frijitas features tender sliced chicken marinated in lime and spices, then broiled with onions and peppers for a flavorful, quick-cooking meal perfect for casual dinners or gatherings.

Ingredients

  • 3 chicken breasts
  • 1/2 cup lime juice
  • 1/4 cup canola oil
  • 1 1/2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 garlic clove
  • 1/2 or 1 onion
  • 1/2 or 1 bell pepper

Instructions

  1. Mix all ingredients together and marinate for 2 hours if possible.
  2. Place the marinated chicken, onions, and peppers on a cookie sheet.
  3. Broil until browned, turning with a spatula often.
  4. Cook for approximately 15 minutes or until fully cooked.
