Ingredients

  • 3 cups corn chips
  • 1 pound ground chuck
  • 1/4 cup minced onion
  • 15 1/2 ounce can chili beans
  • 2 1/4 ounce can sliced olives
  • 1 tablespoon water
  • 1/2 teaspoon salt
  • 1 1/2 cups shredded sharp Cheddar cheese

Instructions

  1. Place 2 cups of corn chips in a 1 1/2-quart casserole dish.
  2. Brown the ground chuck with minced onion in a skillet, stirring to keep the meat crumbly.
  3. Add undrained chili beans, sliced olives, water, salt, and 3/4 cup of shredded Cheddar cheese to the skillet.
  4. Mix well and spread the mixture over the chips in the casserole.
  5. Sprinkle the remaining corn chips and shredded cheese over the top.
  6. Cover and bake at 350°F for 30 minutes.
