Ingredients

  • 2/3 cup sugar
  • 1/2 cup low-fat sour cream
  • 2 tablespoons oleo, softened
  • 2 egg whites
  • 3/4 cup mashed very ripe bananas
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 tablespoons finely chopped nuts

Instructions

  1. Heat oven to 375°F.
  2. Spray a 9 x 9-inch pan with non-stick cooking spray.
  3. Beat sugar, sour cream, oleo, and egg whites in a large bowl on low speed for 1 minute, scraping the bowl occasionally.
  4. Beat in bananas and vanilla on low speed for 30 seconds.
  5. Beat in flour, salt, and baking soda on medium speed for 1 minute, scraping the bowl occasionally.
  6. Stir in chopped nuts.
  7. Spread the batter evenly in the prepared pan.
  8. Bake for 20 to 25 minutes or until light brown.
  9. Allow to cool.
  10. Spread with frosting and cut into 24 bars.
