Ingredients

  • 1 pint vanilla ice cream
  • 1 cup canned pumpkin
  • 1 cup sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1 cup chilled whipping cream
  • 1 baked 9-inch pie crust

Instructions

  1. Spread soft vanilla ice cream in the baked pie crust.
  2. Place the pie in the freezer.
  3. Mix canned pumpkin, sugar, pumpkin pie spice, ground ginger, salt, and chopped walnuts if using.
  4. Beat chilled whipping cream until stiff peaks form.
  5. Fold the whipped cream into the pumpkin mixture.
  6. Pour the pumpkin mixture over the ice cream in the pie shell.
  7. Freeze the pie for several hours until firm.
  8. Remove from freezer 10 to 15 minutes before serving.
