Ingredients

  • 3 eggs
  • 1/2 cup sugar
  • grated rind of 1 lemon
  • juice of 1 lemon
  • 1 tablespoon sugar

Instructions

  1. Beat the eggs and add sugar and lemon juice and grated lemon rind. Cook in a double boiler until the custard thickens, then let it cool.
  2. Add sugar to the egg white and beat until stiff peaks form.
  3. Fold the beaten egg white into the cooled lemon mixture.
  4. Fold in the whipped cream.
  5. Layer three-quarters of the crumb mixture in a 1-1/2 quart rectangular baking dish.
  6. Spread the lemon mixture over the crumb layer.
  7. Sprinkle the remaining crumbs over the lemon mixture.
  8. Put the dessert in the freezer and chill thoroughly.
  9. Cut into squares and serve.
