- Crush the small pastel mints.
- Whip the cream until it reaches soft peaks.
- Fold the crushed mints into the whipped cream.
- Crush the Hydrox cookies and mix with melted butter and powdered sugar to form the crust.
- Press the cookie mixture into the bottom of a 9 x 13-inch cake pan.
- Save some crushed cookies to sprinkle on top.
- Spread the mint and cream mixture evenly over the crust.
- Sprinkle the remaining cookie crumbs on top.
- Freeze until the dessert is firm, about 4 hours or overnight.
