A refreshing frozen mint dessert with creamy layers, crunchy cookie crust, and pastel mints, perfect for summer gatherings or as a cool treat for mint lovers.

Ingredients

  • 1 pt. cream
  • 1 1/2 c. small mints (pastel colors)
  • 1 pkg. Hydrox cookies
  • 3 Tbsp. melted butter
  • 2 Tbsp. powdered sugar

Instructions

  1. Crush the small pastel mints.
  2. Whip the cream until it reaches soft peaks.
  3. Fold the crushed mints into the whipped cream.
  4. Crush the Hydrox cookies and mix with melted butter and powdered sugar to form the crust.
  5. Press the cookie mixture into the bottom of a 9 x 13-inch cake pan.
  6. Save some crushed cookies to sprinkle on top.
  7. Spread the mint and cream mixture evenly over the crust.
  8. Sprinkle the remaining cookie crumbs on top.
  9. Freeze until the dessert is firm, about 4 hours or overnight.
