A refreshing frozen peach treat blending sweet peaches with tangy yogurt, topped with toasted coconut and mint, perfect for a light, cooling dessert on warm days.

Ingredients

  • 16 to 17 oz. can sliced yellow cling peaches in unsweetened fruit juice, well drained
  • 1 c. plain low-fat yogurt
  • 2 Tbsp. granulated sugar
  • toasted flaked coconut

Instructions

  1. Place peach slices on a baking sheet, ensuring they do not touch each other, and freeze for about 1 1/2 hours until hard.
  2. Put the frozen peach slices in a blender or food processor.
  3. Add the yogurt and sugar to the blender.
  4. Process until smooth, about 1 minute.
  5. Spoon the mixture into dessert bowls.
  6. Sprinkle with toasted flaked coconut and garnish with mint sprigs.
  7. Serve immediately.
