Ingredients

  • 3/4 c. all-purpose flour
  • 1/2 c. sugar
  • 1/2 tsp. baking powder
  • 3/4 c. egg substitute
  • 1 1/2 tsp. vanilla extract
  • 1 tsp. grated orange rind
  • 1 1/2 c. chopped pecans
  • 1 c. maraschino cherries
  • 1 c. unsweetened pineapple tidbits
  • 1 (8 oz.) pkg. pitted dates, diced
  • 1 (8 oz.) pkg. dried apricots
  • vegetable cooking spray

Instructions

  1. Line a 9 x 5 x 3-inch loaf pan with foil. Coat with cooking spray and set loaf pan aside.
