Ingredients

  • 1 can (17 oz.) fruit cocktail, drained
  • 2 1/2 cups Bisquick baking mix
  • 3/4 cup sugar
  • 1/2 cup chopped nuts
  • 1/4 cup vegetable oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 3 eggs

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease the bottom only of a 9 x 5 x 3-inch loaf pan.
  3. Chop the fruit cocktail and drain thoroughly.
  4. Mix the chopped fruit cocktail with the remaining ingredients and beat vigorously for 30 strokes.
  5. Pour the batter into the prepared loaf pan.
  6. Bake until a wooden pick inserted in the center comes out clean, about 50 to 55 minutes.
  7. Cool the bread for 10 minutes.
  8. Loosen the sides of the loaf pan.
  9. Remove the bread from the pan and cool completely before slicing.
  10. Wrap tightly in plastic wrap and store in the refrigerator for up to 1 week.
