Ingredients

  • egg
  • bartlett
  • lemon juice
  • orange segments
  • cornstarch
  • Sweet 'n Low
  • salt

Instructions

  1. Drain fruit, reserving syrups.
  2. Cut pears in half lengthwise.
  3. Measure syrups to make 1 1/2 cups.
  4. Combine fruit syrups, lemon juice, salt, and cornstarch in a small saucepan.
  5. Cook, stirring constantly, until thickened and bubbly.
  6. Add Sweet 'n Low.
  7. Add a small amount of hot mixture to well-beaten egg and blend thoroughly.
  8. Return the mixture to the hot saucepan and add grated lemon peel. Cool.
  9. Place a small amount of lemon custard in the bottom of 4 sherbet glasses.
  10. Arrange 4 pear slices, spoke fashion, in the custard. Divide remaining custard over pears.
  11. Garnish with 2 orange segments.
  12. Chill before serving.
