Ingredients

  • 5 large sweet potatoes
  • 1/4 cup sugar
  • 1/4 cup brandy
  • 3 tablespoons butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon pepper
  • 1 tablespoon butter, melted
  • 1 tablespoon grated orange rind

Instructions

  1. Cook sweet potatoes in boiling water to cover for 45 minutes or until tender; cool to touch. Peel and mash the potatoes.
  2. Stir in sugar, brandy, melted butter, salt, ground nutmeg, ground ginger, and pepper; spoon into an 11 x 7 x 1 1/2-inch baking dish.
  3. Brush the top with melted butter and sprinkle with grated orange rind.
  4. Bake at 350°F for 30 minutes; serve warm.
