- Cook sweet potatoes in boiling water to cover for 45 minutes or until tender; cool to touch. Peel and mash the potatoes.
- Stir in sugar, brandy, melted butter, salt, ground nutmeg, ground ginger, and pepper; spoon into an 11 x 7 x 1 1/2-inch baking dish.
- Brush the top with melted butter and sprinkle with grated orange rind.
- Bake at 350°F for 30 minutes; serve warm.
