Fruit Filled Cookies

Ingredients

  • 1 c. brown sugar, packed
  • 3/4 c. melted butter
  • 1 3/4 c. flour, sifted and measured
  • 1/2 tsp. soda
  • 1/2 tsp. salt
  • 1 1/2 c. raw oats
  • 3 c. dates
  • 1/2 c. sugar
  • enough water to moisten

Instructions

  1. Cream margarine and sugar together.
  2. Sift flour, soda, and salt, then add to the creamed mixture. The dough will be quite thick.
  3. Add oats and work in with hands to form a thick mixture.
  4. Divide the dough in half.
  5. Use a 13 x 9-inch pan for assembly.
  6. Rub the pan with shortening.
  7. Crumble half of the dough evenly over the pan and pat down firmly.
  8. Finely chop the dates and mix with sugar and enough water to moisten.
  9. Cook the date mixture over fire until thick, then let cool.
  10. Spread the cooled date mixture evenly over the crust in the pan.
  11. Crumble the remaining dough over the top of the date filling.
