Ingredients

  • 8 oz. acini de pepe pasta
  • 3/4 cup sugar
  • 2 tablespoons flour
  • 4 eggs
  • 8 oz. Cool Whip
  • 2 (10 oz.) Mandarin oranges

Instructions

  1. Boil the acini de pepe pasta in 3 quarts of boiling water until al dente.
  2. Drain the pasta and set aside to cool.
  3. In a saucepan, bring the juice from the mandarin oranges, sugar, and flour almost to a boil.
  4. Gradually blend in the beaten eggs and cook until the mixture thickens.
  5. Allow the juice and mixture to cool completely.
  6. Mix the cooled pasta with the juice mixture.
  7. Add in the mandarin oranges and Cool Whip, mixing well.
  8. Blend the ingredients thoroughly until combined.
  9. Add more drained mandarin oranges as desired before serving.
