Ingredients

  • 2 envelopes Knox gelatine
  • 1 pt. cold water
  • 1 1/2 c. boiling water
  • 1 1/2 c. sugar
  • 3 bananas
  • 1 can crushed pineapple, drained
  • 1 can mandarin oranges, drained

Instructions

  1. Dissolve the gelatin envelopes in 1 pint of cold water (or pineapple juice) and 1 1/2 cups of boiling water.
  2. Add 1 1/2 cups of sugar to the hot mixture and stir until dissolved.
  3. Peel and slice the bananas.
  4. Drain the canned pineapple and mandarin oranges.
  5. Combine the dissolved gelatin mixture with the sliced bananas, pineapple, and oranges.
  6. Pour into a mold or serving dish and refrigerate until set, about 4 hours.
  7. Optionally, add sliced fresh strawberries when in season before chilling.

Tips & Substitutions

For a lighter option, consider using a sugar substitute or reducing the sugar to 1 cup. If you can’t find Knox gelatine, a vegan alternative like agar-agar can work but will require different ratios. To enhance flavor, add a splash of lemon juice or zest to the gelatin mixture. When preparing fruit, ensure it’s ripe for the best taste.

Serving Suggestions

This Fruit Refresher makes a delightful dessert on its own but can also be paired with whipped cream for added richness. Serve alongside a light salad, like Green Bean And Onion Salad, for a balanced meal. For added flair, top with fresh mint leaves or serve with a scoop of Apricot Ice Cream Sauce for a delicious twist.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 5 days. The gelatin will maintain its texture, but avoid freezing, as it can change consistency. To serve chilled, simply cut into squares or scoop out of the mold for a refreshing treat.

Frequently Asked Questions

Can I use fresh fruit instead of canned?

Yes, you can use fresh fruit, but ensure it’s ripe and not overly soft, as it may break down in the gelatin. Bananas, berries, or peaches can be great alternatives. Just remember to adjust the quantity based on the fruit's size and juiciness.

How long does it take for the gelatin to set?

The gelatin typically requires about 4 hours to set fully in the refrigerator. For best results, prepare it the night before serving. If you’re in a hurry, placing it in the freezer for about 1 hour can help speed up the setting process, but keep an eye on it to avoid freezing.

What can I serve with this dessert?

This Fruit Refresher pairs wonderfully with a light whipped cream or yogurt for added creaminess. It also complements a variety of dishes, making it a great side for brunch or a summer picnic. Consider serving it alongside a refreshing drink like Tangy Orange Punch for a complete experience.
