Ingredients

  • 1/2 lb butter
  • 3 cups flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 4 egg yolks
  • 1/2 teaspoon salt
  • 1/2 pint sour cream
  • Grated rind from 1 lemon
  • 1 teaspoon lemon juice

Instructions

  1. Work the butter and flour like for a pie crust.
  2. Add the rest of the ingredients and mix well.
  3. Spread on an ungreased cookie sheet and pat down with a spatula.
  4. Retain a little batter and add enough flour to make it thick enough to roll between the palms of hands to make crisscross strips.
  5. Spread fruit preserves over the batter and sprinkle the top with nuts, then place the crisscross strips over the top.
  6. Bake in a 325°F oven for 30 minutes.
  7. Sprinkle with powdered sugar and cut into squares.

Tips & Substitutions

To ensure a flaky texture, work the butter into the flour quickly, similar to making a pie crust. If you don’t have sour cream, plain yogurt can be a great substitute. For a citrus twist, consider adding orange zest in addition to the lemon. Use any fruit preserves you like, such as raspberry or apricot, for a different flavor profile.

Serving Suggestions

These fruit squares are perfect for afternoon tea or as a delightful dessert after a meal. They pair beautifully with a cup of tea or coffee. Consider serving them alongside a fresh fruit salad or whipped cream for added richness. For a festive touch, dust with powdered sugar just before serving.

Storage & Reheating

Store the fruit squares in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate them for up to a week. To reheat, place squares in a warm oven for a few minutes to refresh their texture, or enjoy them cold straight from the fridge.
