Sweet and fruity acorn squash halves are baked to tender perfection, infused with pineapple, orange, cinnamon, and brown sugar for a delightful fall or holiday side dish.

Ingredients

  • 2 medium acorn squash
  • 3/4 cup canned crushed pineapple in juice, drained
  • 3/4 cup chopped orange
  • 4 tablespoons brown sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Cut each acorn squash in half crosswise; remove and discard seeds.
  2. Place squash halves, cut side down, in a lightly greased 15 x 10 x 1-inch jelly roll pan.
  3. Bake, uncovered, at 350°F (175°C) for 40 minutes.
