Ingredients

  • 2 (14 oz.) cans pineapple tidbits, drained
  • 1 (3 oz.) package lemon flavored chiffon pie filling mix
  • 1/2 cup whipped cream
  • 3 tablespoons mayonnaise
  • 1 cup miniature marshmallows
  • 1 (16 oz.) can fruit cocktail, drained
  • 1/4 cup sliced maraschino cherries

Instructions

  1. Oil a 3-quart mold or 9 x 13-inch pan.
  2. Thoroughly drain the pineapple.
  3. Measure 1/2 cup reserved pineapple juice and heat to boiling.
  4. Prepare the lemon flavored chiffon pie filling as directed on the package, substituting the 1/2 cup hot pineapple juice for the boiling water.
  5. Allow the pie filling to cool.
  6. Blend whipped cream with mayonnaise.
  7. Fold in the drained pineapple, miniature marshmallows, drained fruit cocktail, and maraschino cherries into the whipped cream mixture.
  8. Combine this mixture with the cooled pie filling.
  9. Pour into the prepared pan and freeze.
  10. Unmold about 30 minutes before serving and garnish if desired.
