Ingredients

  • 1 large can (20 oz.) pineapple chunks
  • 8 oz. red maraschino cherries
  • 8 oz. green maraschino cherries
  • 3/4 c. softened margarine
  • 2 c. sugar
  • 8 eggs
  • 1 tsp. vanilla
  • 3 3/4 c. all purpose flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 c. chopped walnuts

Instructions

  1. Drain pineapple chunks & cherries over night in colander. Then, before using fruit, set it on and cover it with paper towels to remove excess moisture. Cream butter & sugar well. Add eggs, one at a time, beating well after each addition. Add vanilla. Add dry ingredients to creamed mixture, beating until combined. Fold in drained fruit & walnuts. Turn into 2-3 greased loaf pans & bake in preheated 325° oven for 1 hour & 15 minutes or until done (do not overbake). Cool in pans. To store in freezer, wrap tightly in foil.
