Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 cup skim milk
  • 5 egg whites
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 1/3 cup semi-sweet chocolate chips
  • 1/4 cup sugar

Instructions

  1. Whisk the cocoa powder, powdered sugar, and milk in the top of a double boiler over boiling water until smooth.
  2. Add the semi-sweet chocolate chips and stir until the chips are melted.
  3. Stir the mixture and lower the heat to a simmer.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the egg whites into the chocolate mixture until well combined.
  6. Pour the mixture into individual ramekins or a baking dish.
  7. Bake in a preheated oven at 375°F (190°C) for about 20 minutes until puffed and set.
  8. Serve immediately for best texture and flavor.
