Ingredients

  • yellow squash
  • onion
  • green pepper
  • celery (if you want)
  • 1/2 can diced Ro-Tel tomatoes
  • 1 whole egg, beaten
  • 1 small pkg. cream cheese
  • 1/2 c. Mozzarella cheese

Instructions

  1. Cut up enough vegetables to make a potful.
  2. Cook and drain. Add remaining ingredients.
  3. Mix together well and put in baking dish.
  4. Top with bread crumbs and 1/2 cup shredded Mozzarella cheese.
  5. Bake at 350° for about 30 minutes.
