Ingredients

  • 1 lb. ground beef
  • 1 medium onion
  • 2 Tbsp. all-purpose flour
  • 1/2 Tbsp. chili powder
  • 1/2 tsp. salt
  • 1 tsp. garlic powder
  • 1/2 tsp. ground cumin (optional)
  • 1 (14.5 oz.) can stewed tomatoes
  • 1 can enchilada sauce
  • 10 flour tortillas
  • 2 cups shredded Co Jack or Mexican melting cheese

Instructions

  1. In a saucepan over medium heat, combine cooked ground beef, chopped onions, and about 1/2 cup water; cook until onions are translucent.
  2. Add flour, chili powder, salt, garlic powder, and ground cumin (if using); mix well.
  3. Stir in stewed tomatoes; bring to a boil.
  4. Reduce heat and simmer for about 15 minutes, until most of the liquid is absorbed.
  5. Pour about 1 1/2 cups of enchilada sauce into a greased 9 x 13 inch baking dish.
  6. Spread about 1/4 cup of beef mixture down the center of each flour tortilla.
  7. Top with 1 to 2 tablespoons of shredded cheese.
  8. Roll up each tortilla tightly and place seam side down over the sauce in the baking dish.
  9. Repeat with remaining tortillas.
  10. Top the assembled enchiladas with the remaining sauce and cheese.
  11. Broil on LOW until the cheese is melted and bubbly.
