Ingredients

  • 18 small new potatoes
  • 2 Tbsp. olive oil
  • 1 Tbsp. minced garlic
  • 1 Tbsp. basil, parsley or oregano
  • salt
  • pepper

Instructions

  1. Quarter the new potatoes.
  2. Toss the potatoes with olive oil, minced garlic, herbs, salt, and pepper.
  3. Preheat the oven to 450°F (230°C).
  4. Place a nonstick or lightly greased pan in the oven to preheat.
  5. Arrange the potatoes on a sheet and bake for about 30 minutes, turning several times to brown well.
