Garlic roasted potatoes are crispy, golden, and bursting with garlic and herbs, perfect as a side for family dinners or casual gatherings.

Ingredients

  • 3 lb. small red potatoes
  • 1/4 c. olive oil
  • 1 1/2 tsp. kosher salt
  • 1 tsp. black pepper
  • 2 Tbsp. minced garlic
  • 2 Tbsp. minced fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the potatoes in half or quarters and place in a bowl.
  3. Add olive oil, kosher salt, black pepper, and minced garlic to the bowl.
  4. Toss until the potatoes are well coated.
  5. Transfer the potatoes to a sheet pan and spread out into one layer.
  6. Roast in the oven for 45 minutes to 1 hour, flipping twice during cooking with a spatula to ensure even browning.
  7. Remove from the oven and toss with minced fresh parsley.
  8. Season to taste and serve hot.
