- Preheat oven to 400°F (200°C).
- Cut the potatoes in half or quarters and place in a bowl.
- Add olive oil, kosher salt, black pepper, and minced garlic to the bowl.
- Toss until the potatoes are well coated.
- Transfer the potatoes to a sheet pan and spread out into one layer.
- Roast in the oven for 45 minutes to 1 hour, flipping twice during cooking with a spatula to ensure even browning.
- Remove from the oven and toss with minced fresh parsley.
- Season to taste and serve hot.
