Ingredients

  • 1 3/4 cups water
  • 1/2 cup corn meal
  • 2 teaspoons salt
  • 1/2 cup molasses
  • 2 tablespoons shortening
  • 1 package dry yeast
  • 1/2 cup warm water
  • 4 to 5 cups all-purpose flour

Instructions

  1. Combine water, corn meal, and salt in a saucepan.
  2. Bring to a boil, stirring constantly.
  3. Cool until thick.
  4. Add molasses and shortening to the mixture.
  5. Cool until lukewarm.
  6. Soften yeast in warm water in a mixing bowl; add the mush and blend well.
  7. Gradually add flour to form a stiff dough. Knead until satiny, about 5 minutes.
  8. Place in a greased bowl, turning to grease all sides.
  9. Cover and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
  10. Place dough on a surface covered with corn meal.
  11. Work down and divide into 2 portions.
  12. Place in greased baking dishes.
  13. Cover and let rise until doubled.
  14. Bake at 350°F for 45 to 55 minutes.
