Ingredients

  • 10 small red potatoes
  • 6 cloves garlic
  • 2 Tbsp. olive or vegetable oil
  • 3 sprigs parsley
  • fresh ground pepper

Instructions

  1. Slice garlic thin.
  2. Combine garlic, potatoes, oil, and parsley in a bowl.
  3. Place the mixture in a single layer in a flat pan, preferably enameled cast iron.
  4. Sprinkle with fresh ground pepper.
  5. Bake in a 375°F oven for 45 minutes.
