Ingredients

  • 2 Tbsp. olive oil
  • 2 dozen Little Neck clams, cleaned and scrubbed
  • 1/2 cup finely chopped onions
  • 2 Tbsp. chopped garlic
  • 1/4 cup dry white wine
  • 1 pound linguine, cooked until tender
  • 2 Tbsp. finely chopped fresh parsley leaves

Instructions

  1. In a large sauté pan with a lid, add the olive oil and heat over medium heat.
  2. Add the cleaned clams, season with salt and pepper, cover, and sauté for 6 to 8 minutes until shells open; discard any that do not open.
  3. Add the chopped onions, garlic, and white wine to the pan. Continue to sauté for 2 minutes.
  4. Add the cooked linguine to the pan and season with salt and pepper. Sauté for another 2 minutes.
  5. Stir in the chopped parsley leaves, mix well, and serve on a large platter.
  6. Drizzle with olive oil before serving.
