- Prepare the green pepper for chopping by first halving it by cutting it from stem to end.
- Then use one hand to pull out the seeds, the white membrane you see, and the stem.
- Discard them and then chop up the pepper.
- Put the tomatoes, cucumber, onion, and green pepper into the blender.
- Add the cilantro, olive oil, salt, and pepper.
- Put the top on the blender, and puree until smooth.
- Taste a spoonful, and adjust the thickness and flavor with water, vinegar, and/or sugar.
- Puree briefly to combine the additional flavorings, if necessary.
- Pour each serving into a bowl.
