Ingredients

  • 5 eggs
  • 1 lb. can pumpkin
  • 2 c. sugar
  • 1 1/2 c. cooking oil
  • 2 tsp. vanilla
  • 1/2 c. pecans
  • 1 1/2 c. candied fruit
  • 2 1/2 c. self-rising flour
  • 2 tsp. nutmeg
  • 2 1/2 tsp. cinnamon
  • 1 pkg. lemon instant pudding
  • 1 pkg. butterscotch instant pudding

Instructions

  1. Mix eggs, pumpkin, cooking oil, sugar and vanilla. Add all dry ingredients. Mix well and add pecans and candied fruit. Batter will make 3 loaf pans. Grease and flour pans. Bake at 275°.
