Ingredients

  • 2 c. flour
  • 3/4 c. sugar
  • 3/4 c. margarine
  • 2 egg yolks
  • 3/4 tsp. baking powder
  • 3 Tbsp. evaporated milk
  • pinch of salt
  • 2 Tbsp. butter
  • 1 can pie filling (cherry or blueberry)
  • 1/2 tsp. cinnamon

Instructions

  1. Mix all ingredients except the pie filling and cinnamon. Work with your hands until well combined.
  2. Spread the dough evenly in a 9x13 inch pan.
  3. Bake at 350°F (175°C) for 35 to 45 minutes until golden.
  4. Remove from oven and spread the pie filling evenly over the baked crust.
  5. In a separate bowl, beat 2 egg whites until stiff peaks form, gradually adding 2 tablespoons of sugar.
  6. Mix 2 tablespoons of softened butter with 1/2 teaspoon of cinnamon, then fold into the egg whites.
  7. Spread the meringue mixture over the pie filling and bake for an additional 10-15 minutes until golden.
