Gherkin Salad offers a crisp, tangy flavor with fresh cucumbers, onions, and herbs, perfect as a refreshing side dish or accompaniment to grilled meats.

Ingredients

  • 2 qt. sliced cucumbers
  • 2 medium onions
  • few sprigs parsley
  • 2 Tbsp. salt
  • 1 1/2 cups sugar
  • 1/2 cup white vinegar
  • sour cream
  • dill weed

Instructions

  1. Slice cucumbers as thin as possible by hand or in a food processor.
  2. Slice onions into rings.
  3. Tear up parsley sprigs.
  4. Sprinkle salt over all and stir well.
  5. Add 3 or 4 ice cubes to the mixture.
  6. Cover and let set for several hours.
  7. Drain in a colander and rinse with cold water.
  8. Drain very well before serving.
