Ingredients

  • 1.5 cups salsa
  • 1 can artichoke hearts
  • 2 4 oz cans mushrooms
  • 1/2 large yellow onion, diced
  • 2/3 c parmesan cheese
  • 2 c monterrey jack
  • 2 c cheddar
  • 12 eggs
  • 2 c sour cream

Instructions

  1. 1. preheat oven to 350F
  2. 2. Coat a 9x13 pan with spray
  3. 3. Mix eggs and sour cream together in a large bowl.
  4. 4. Layer salsa, artichokes, mushrooms, onions and cheese.
  5. 5. Pour egg mixture over
  6. 6. Bake at 350F for 50 min
