- Heat oven to 350°F (175°C).
- In a large bowl, combine flour and baking soda; set aside.
- Cream together butter, brown sugar, and vanilla until light and fluffy.
- Add the flour mixture to the creamed mixture and blend until just combined.
- Dough will be crumbly. Pat dough evenly into a greased 12-inch round pizza pan or a 9 x 13-inch pan.
- Prick the crust with a fork.
- Bake for 15 to 16 minutes or until the crust is firm.
- Combine mini M&M's, shredded coconut, and peanuts.
- Spread warm crust evenly with caramel ice cream topping.
- Sprinkle the mixture of M&M's, coconut, and peanuts evenly over the caramel layer.
- Pat lightly to press toppings into the caramel.
- Bake for an additional 5 minutes or until the coconut begins to turn golden.
- Allow the cookie to cool completely before cutting into 16 wedges.
