Ingredients

  • vanilla extract
  • shredded coconut
  • baking soda
  • brown sugar
  • caramel ice cream topping
  • flour
  • milk
  • butter
  • peanuts

Instructions

  1. Heat oven to 350°F (175°C).
  2. In a large bowl, combine flour and baking soda; set aside.
  3. Cream together butter, brown sugar, and vanilla until light and fluffy.
  4. Add the flour mixture to the creamed mixture and blend until just combined.
  5. Dough will be crumbly. Pat dough evenly into a greased 12-inch round pizza pan or a 9 x 13-inch pan.
  6. Prick the crust with a fork.
  7. Bake for 15 to 16 minutes or until the crust is firm.
  8. Combine mini M&M's, shredded coconut, and peanuts.
  9. Spread warm crust evenly with caramel ice cream topping.
  10. Sprinkle the mixture of M&M's, coconut, and peanuts evenly over the caramel layer.
  11. Pat lightly to press toppings into the caramel.
  12. Bake for an additional 5 minutes or until the coconut begins to turn golden.
  13. Allow the cookie to cool completely before cutting into 16 wedges.
