Ingredients

  • 2 lb. green tomatoes
  • 2 c. brown sugar
  • 1 1/2 c. water
  • 1 lemon
  • 1 stick cinnamon
  • 2 pieces ginger root

Instructions

  1. Combine sugar, water, thinly sliced lemon, cinnamon stick, and ginger root in a saucepan and bring to a simmer.
  2. Simmer for 20 minutes to infuse the flavors.
  3. Remove the spices from the syrup.
  4. Add green tomatoes to the syrup and boil gently until they are bright and clear.
  5. Cover and let stand overnight.
  6. Drain off the syrup and boil it until thick.
  7. Reheat the tomatoes in the thickened syrup to boiling.
  8. Seal the preserves in sterilized jars.
